Why do we even serve food at schools?? Used to be parents packed a meal for the kids and that was it. But now the minority parents demand working white people feed their kids.
First, meatless Mondays are a good idea.... it's good for the health of the kids (most Americans eat more meat, and especially more red meat, than is healthy), it's good for the budget of the schools (meat tends to be more expensive than vegetarian alternatives), and it's good for the environment (raising meat tends to put a bigger burden on the environment than raising the equivalent calories of plants). It also accommodates religious concerns, since there are plenty of religions that have issues with pork, beef, or all animal products, whereas nearly all religions are OK with eating nearly all plants. Moreover, it accommodates those kids who have issues with meat-eating for ethical reasons.
As for the idea that the only option used to be for parents to pack a meal, that's true... but not in our lifetimes. The first school lunch programs, where the schools served lunches, date to 1893, the programs were common by the 1920s, and the federal government took a role 73 years ago. It was initially framed as a national security measure.
Anyway, this isn't something that is about "minority parents" demanding white people feed their kids -- though I guess it's inevitable that dumb racist people would think of it that way. In fact, school lunch programs are popular among working families of all sorts, especially those with two wage-earners, since it provides an affordable time-saving option for the family. And, of course, subsidized school lunch programs are popular pretty much everywhere there are poor and lower-middle-class families, regardless of race and ethnicity. In fact, many poor white areas have summer programs to make sure kids from poorer families get their nutrition needs met even outside of the school year:

These are smart investments for society to make. It's well understood that childhood nutrition has an important role in the development of brains. If you want kids to grow up to be law-abiding and productive members of society, making sure they have nutritious meals throughout childhood helps to assure that. It'll tend to mean kids with higher IQs, stronger bodies, fewer health problems, and better impulse control, all of which save us lots of money in the long run. It would be dumb to allow racism to push us into a penny-wise and pound-foolish choice.
