You do realize, don't you, that our German ancestors came here over 200 years ago, and have since intermarried with Scandinavians, Scots, Irish, English, French, Swiss, Italians, eastern Europeans, Asians, Hispanics, Natives, and Africans? In other words, you would be hard pressed to find very many native-born Americans that are 100% one nationality. BTW, German is a nationality, not an ethnic group.

But, other ethnic tend to be ignored.

A lot of Germans brought their anti Polish sentiment with them to the USA.

The dumb Polak joke was a isolated incident before the 1960s.

In the Mid West in the 1940s or earlier Germans were the ones telling dumb Polak jokes.

Although by the 1960s & 70s shows like Jew George Schlachter Laugh in & Jew Norman Lears All in the Family were promoting dumb Polak jokes into the mainstream.

We all have prejudices. What makes it wrong is when the holder of a prejudice has power over the object of that disdain. Since those of Polish descent in America are no more targets than any other group of white people, there's no harm. The same cannot be said for those who hold prejudices regarding non-whites, and who hold positions of power over them or support those who do who share the same bigotry.

Wrong, Poles are far more prejudiced upon than most White Americans.

Most groups White or Non White aren't treated particularly bad in the modern era.

But, in terms of prejudices I see no reason to believe that Poles or Italians or French are treated better than Latinos for example.

Sure, there's a widely publicised Black history month, but Polish history month gets ignored.

If a Polish person has the same qualifications as a Black person,A lot of times the Black person shall be chosen for jobs or college due to their skin color & Affirmative Action profiling.
