Interactions between humans and between animals is so infinitesimally small on the scale on the cosmos it is utterly inconsequential as a property of the universe. As a fundamental property of the universe we aren't even on the radar.

That's simply a problem of epistemology. The universe doesn't care about human limitations to be able to measure and observe. Physical reality and the fundamental properties of the universe exist whether or not we are there to measure/observe it.

The uncertainty principle says you can either accurately measure position or momentum at the subatomic scale, but not both at the same time. That is not proof of an unorganized, random, arbitrary universe. Quite the opposite.
