I saw some photos of their meals. Looks like nouveau cuisine type servings, very small. Scallop entree had 2 scallops. I'd rather cook my own. For tilapia I dip the fillets in milk, roll'm in seasoned mashed potato flakes, pan fry them. Swordfish steaks I broil'm for 3 minutes on 1 side, pull'm out, change the oven to bake as high as it will go, turn'm over, finish by baking them 3 minutes and covering them in warmed garlic/butter/lemon sauce. For salmon I just pouch it, drain off the water and cover it with a brown sugar/maple syrup sauce until it forms a slight crust around the edges. Yummo!!!!:)
I don’t eat tilapia, farm raised is the only kind available here. I don’t eat farm raised fish. I prefer fresh from the wild.

2 Scallops? WTF! A starving Ethiopian could eat that and still be damn hungry. Probably start gnawing on the owners ankles just to get some nutrition! The rest of your post looks good!

I agree, I much prefer wild fish. I don't eat a lot of tilapia...maybe 5 or 6 portions a year. And, it's tough waiting all year for the wild salmon to come into season and be sold here in Florida at my local store. I'm lucky to have some neighbors who go over to the ocean once a month and come back with some red snapper, hog snapper and HOPEFULLY grouper! (My favorite)

I have been to places like that. Nice and all, but, a person has to eat!
What good restaurant would bury a good piece of fish under a pile of goo or strong inappropriate flavors?
High heat, short time always err on the side of underdone... It's not rocket science...
But anyway...as far as the fancy new pricey small plate thing.....who likes to spend a couple of hundred bucks and have to go home and cook a real late night dinner?

I never understood the reasoning behind small orders of fish. I mean, gee whiz if I'm out and order a steak it's usually somewhere between 8 and 12 ounces. But, when they serve you fish it's probably around 6 ounces. What's up with THAT?
