No he can't. He couldn't force Secret Service to take him to the Capitol on January 6 and he can't tell other passengers that he's not going to be on the plane. That would literally undermine the entire reason for having him fly on a different plane.

That's not how things work.
As soon as you tell everyone on the plane that the President isn't on there due to a threat, they will want to get off the plane, which would undermine the reason for sneaking the President off the plane in the first place. You also risk someone posting the news on social media or reporting it as news.

His staff and media didn't have smart phones, will cell service all over the world, to report what was happening in real time.
I know how things work with Trump, he dictates his own policies, like interfering in the DOJ.
Trump's staff are not going to go on their X accounts and blow their bosses cover.
The journalists who are allowed on Air Force One are carefully screened and undoubtedly have to pass rigorous national security clearances. If requested to keep their mouths shut for the next 24 hours for the safety of the president they can be trusted.
Any minimal risk of leakage is worth taking to protect the lives of dozens of people.
