Viruses don't evolve. They are not alive.
The Theory of Evolution is not a theory of science. It's a religion. If you want to believe it, that's your business.
That said, viruses can be mutated by a host cell. If it does, that is a completely new variant. It has NOTHING to do with the original virus. It is simply a new variant of that series. For covid19, if that happens, he becomes a completely new variant of the Covid/SARS series (covid21?). Such a mutation must first:
1) survive the attacks levied by the body's defenses.
2) make it to the outside world, and survive long enough to infect another host.
3) replicate in that host and again make it outside intact.
Covid19 itself is a variant. You cannot have a variant of a variant.
Concerning Delta and Omicron:
Consider that the so-called Delta 'variant' was introduced in the news the week after Nov 15th, along with many articles describing how dangerous it was to be with your families and friends during the holidays. This 'variant' apparently occurred in a single host and was found. In the next news cycle, this single mutation somehow made it around the world infecting thousands, as if it were able to travel at supersonic speeds.
The so-called Omicron 'variant' was introduced on EXACTLY the same week one year later, along with many articles describing how dangerous it was to be with your families and friends during the holidays. This 'variant' apparently occurred in a single host and was found. In the next news cycle, this single mutation somehow made it around the world infecting thousands, as if it were able to travel at supersonic speeds.
